AUNT NANCY'S FUDGE
My Great Aunt Nancy should be eligible for sainthood at this point. She raised 4 high spirited boys into manhood, was an elementary school teacher, and was one of the greatest hostesses I’ve ever met.
Every single holiday season, she lovingly handmade fudge for dozens of her relatives and friends, painstakingly wrapped them in gorgeous papers and bows, and delivered them with joy and Christmas greetings. For Nancy, this fudge was one of many ways she expressed appreciation and love for the people in her life. I distinctly remember as a child being so excited around Christmas time, just waiting for Aunt Nancy’s fudge to arrive.
In her later years, my lovely great aunt developed memory issues, but a few of us in the family cherish this recipe of hers, and continue on in making fudge for those we love and appreciate, in honor of Nancy.
I hope you love Aunt Nancy’s fudge as much as I do, perhaps enough to replicate the recipe I have included here for those you love for your holiday gatherings!

AUNT NANCY'S CHOCOLATE FUDGE RECIPE
INGREDIENTS:
2 Packages of Chocolate Chips (12 oz bags) = Approx. 4 cups of chocolate chips
1/2 lb softened (room temperature) butter
1 (7-8oz) jar marshmallow cream
2 cups chopped nuts (walnuts preferred - you can certainly omit if you have an allergy!)
2 tsp. vanilla
4 1/2 cups granulated sugar
1 large can evaporated milk (PET preferred)
INSTRUCTIONS:
Bring the large can of evaporated milk and 4 1/2 cups of granulated sugar to a rolling boil. Once the mixture has reached a full rolling boil, set a timer for 8 1/2 minutes (stirring continuously so the mixture does not burn)
Add the 2 packages of chocolate chips, 1/2 lb softened butter, 1 jar of marshmallow cream, and 2 tsp. vanilla to a large bowl. Ingredients do not need to be "mixed" - the sugar/evaporated milk mixture you are boiling will be poured over the top
Once the sugar/evaporated milk mixture has been at a rolling boil for 8 1/2 minutes, pour this over the large bowl of other ingredients, stirring continuously
Once the ingredients in the large bowl are successfully combined, stir in the chopped nuts (if desired)
Butter a cookie sheet and, once cool, pour the contents of the large bowl into the cookie sheet. Store in the refrigerator until firm
Makes 5 lbs of chocolate fudge!
